ROASTED SWEET POTATO & GARLIC HUMMUS WITH TURMERIC

About the Recipe

When you're cooking with turmeric for the medicinal values it provides to the body, you can’t go wrong with adding it into your sweet potatoes. Sweet potatoes are a superfood that not only contains vitamin A and fiber, but the combination of turmeric and sweet potatoes is super packed with anti-inflammatory agents and super high levels of antioxidants.

Ingredients

  • 2 Medium Sweet Potatoes, peeled and cut into 1 in. pc. (2 ½- 3 cups)

  • 1 (15oz) Can Chickpeas, drained and rinsed

  • 2 Tbsp. SDG Spiced Up Turmeric Blend

  • 1 Head of Garlic (8 cloves), Roasted

  • 1 tablespoon Tahini

  • 1-2 tsp. Himalayan Sea Salt (If desired)

  • ¼ Cup. Olive Oil

  • 3 tbsp. Fresh Lemon Juice

  • 3 tbsp. Fresh Orange Juice

Preparation

  1. Preheat your oven to 400 ⸰F.

  2. Next, rub the sweet potatoes with olive oil. Line a baking sheet with foil or parchment paper and place into the oven. Bake for 35-40 min, or until tender.

  3. While the sweet potatoes are in the oven, peel off the outer layer of the garlic, (keep skin on) & cut ¼ in. off the top . Place in a small baking pan or tin. Drizzle w/ olive oil to coat, cover with aluminum foil and bake for 25-30 minutes or until golden brown; alongside the sweet potatoes. Remove and cool.

  4. Let the roasted sweet potatoes and garlic cool.

  5. In a food processor combine the chickpeas, sweet potato, garlic tahini, SDG Turmeric Spice Blend, lemon & orange juice. Blend for 60 seconds.

  6. Run the motor slowly, next add the olive oil until smooth and creamy. Blend until mixture is creamy & smooth, about 60 seconds. Taste & adjust as needed.

  7. For extra depth of flavor, In a small saucer pan, add 2-3 tbsp olive oil, let heat up for 1-2 minutes then add 1 tbsp SDG Turmeric Spice Blend. Stir for 1 minute. Let it heat until it forms a smooth paste. Gradually add the olive oil and turmeric mixture to the food processor creating a smooth and creamy texture. Scraping down the sides often.

  8. Blend until combined and Serve

Once you make sweet potato hummus, you will want it all the time with just about everything! Use it as a dip for your vegetables like celery and peppers, or serve with pita chips for extra crunch.
